Blue Cheese Burgers
Ingredients:
1 1/2 lbs ground sirloin (works best)
1 Tbls mustard
2 Tbls catsup (sugarfree)

freshly ground black pepper 6 ounces Blue Cheese |
Preparation:
Gently combine the ground sirloin (I usually grind my own in the food processor), mustard, catsup and pepper. Cut blue cheese into 4 pieces and roll them into 4 balls. Divide the sirloin into 4 patties and gently flatten them. Put one piece of the blue cheese into each burger and gently fold the sirloin around them. Then gently shape into a flattened pattie. (If you work the meat gently, you get much more flavor.) You can grill these, but they work best in a grill pan on the range. If the cheese begins to runs out, you know they are done. I like mine rare, so I use a meat thermometer. These are very yummy IF you like blue cheese. I have put sauted mushrooms over them for company, and they think I have made a "special" dish!
