Corned Beef & Cabbage from Stephanie
Ingredients:
- 5 lb. beef brisket
- 3 whole cloves
- 1/4 cup onion
- 1/4 cup bell pepper
- 3 cloves garlic
- 1/2 cup rosemary

- 1 cup celery
- 3 sprigs parsley
- 6 black peppercorns
- 2 bay leaves
- 1 head cabbage

Preparation:
Place beef in large pot, cover with water and bring to boil. Make
a garni by placing onion, cloves, garlic, peppers, celery, rosemary,
parsley, peppercorns and bay leaves in a cloth and tie with string.
When beef comes to a boil, drain and add fresh water with the garni
bag and bring to a boil. Reduce heat and simmer for 5 hours. During
last 30 mins. of cooking, add cabbage in wedges. serve with mustard.
