Dawn's Spicy Taco Quiche
Ingredients:
1 lb. ground beef
1 packet spicy taco seasoning
1/2 cup shredded mexican cheese blend
|
1 cup fresh spinach leaves 1/2 cup heavy cream
4 large eggs
|
Preparation:
Brown the ground beef and drain if desired. Add the packet of taco seasoning and mix well. Butter a 10 inch pie plate and layer the beef in the bottom, cheese next, and a layer or 2 of spinach leaves. (you can leave the spinach out--I put it in everything) In a bowl, mix the cream and eggs well and pour over the rest. Bake for 10 minutes at 400 degrees, then reduce heat to 300 and cook an additional 10-20 minutes until fork comes out clean when poked. This turns out very beefy--it also works well with 1/2 lb ground beef. If you're out of induction, try adding tomatoes, onions, peppers, or any sort of taco garnishes.
Serves: 4-8 depending on appetite
