Layered Mexican Casserole
Ingredients:
- 1 lb ground beef
- 1 can chopped rotel tomatoes
- 4 low carb tortillas (garlic & herb is best)
- about 1 & 1/2 cups shredded cheddar
- about 5-6 tbsp sour cream

- garlic powder
- onion powder
- chili powder salt

Preparation:
Brown ground beef with salt and spices to taste. Add rotel tomatoes and let cook down about 10-15 mins. You want the tomatoes broken down, but still juicy. Then layer in casserole in following order: 1. meat/rotel mix 2. 2 lc tortillas (side by side) 3. sour cream spread thinly 4. cheese 5. meat/rotel mix 6. 2 lc tortillas 7. sour cream 8. cheese Then just bake at about 350 for 20-30 mins until hot and bubbly. Makes 6 servings.
