No Noodle Lasagna
Ingredients:
- 1 lb ground beef
- 1/2 cup Ricotta Cheese
- 3-4 ounces sliced Mozzarella Cheese

- 1/2-3/4 cup Tomato Sauce Italian Herbs to taste
- Garlic, salt, pepper to taste

Preparation:
Brown Ground Beef and spices, stirring constantly to break up well.
Add tomato sauce and stir. In a small casserole dish, layer beef/ricotta/mozzarella,
etc, ending with Mozzarella on top. Bake at 350 for about 15 minutes,
or microwave for about 30-45 seconds just to warm the cheeses. Dig
in! This satisfies my craving for the tomato paste and garlic, but
keeps me from buying the expensive LC noodles. I use the Spice Islands
Italian Herb seasoning--Bunches of it--you can't even see the meat
when I sprinkle it on top. Ditto for the garlic-3 cloves or so fresh
or about a teaspoonful of the store bought. I do use the extra lean
ground beef due to the high fat content of this recipe. Your carbs/serving
will vary due to the type of Ricotta and the amount/type of tomato
sauce. I usually figure mine's 3-4 grams/serving, but you'll have
to add it up--OOOOH I just thought of something- you coult probably
cut up 1/4-1/2 onion into the ground beef too (I'll have to try
that next time) Sorry--I tend to "play" with recipes so writing
them down is difficult.
