Mock French Toast

Ingredients:

4 large eggs

2 tablespoons oil (olive works good)

2 tablespoons water

1/2 cup soy powder (I used soy flour - it was all I had)

1/2 teaspoon salt

1 tsp of vanilla (you could even add some almond)

1 teaspoon baking powder

 

Preparation:

Beat eggs with oil and water. Stir dry ingredients together and beat into egg mixture until blended. Bake in a greased bread pan at 350 for 50 minutes, or until it looks pretty much set! I cut it into pieces and ate it with sugar-free maple syrup. Was pretty good! (The original recipe is called Flatbread. Bake for 10 minutes in a 7 x 11 pan and don't let it brown. Cut it in half, then slice into 4 pieces the size of regular bread.) You can add nuts, cinnamon, whatever you like to vary this recipe.
