Crock Pot Beef Bourguignon
Ingredients:
- 1 cup dry red wine
- 2 T. olive oil
- 1/2 t. thyme
- 2 T. chopped parsley
- 1 bay leaf
- 1/4 t. pepper

- 2 lbs. stewing beef, cut into cubes
- 3 slices of bacon, cut into pieces
- 12 pearl onions
- 1/2 lb. small mushrooms, sliced
- 2 cloves garlic, minced
- 1 t. salt

Preparation:
1. Combine first six ingredients. Mix well and add beef. 2. Marinate
at least 3 hours (overnight if refrigerated). 3. Drain meat, reserving
marinade. 4. In skillet, saute bacon and remove. Brown marinated
stewing beef in bacon fat. 5. Combine stewing beef, bacon, vegetables
and seasonings in slow cooker. Pour over enough of the marinade
to cover. 6. Cook on low 8-10 hours.
