Cauliflower Casserole Bake
Ingredients:

14 oz pkg frozen cauliflower 1cup grated Mont. Jack cheese
1 cup sour cream
4 oz chopped green chilies

4 tbsp butter, melted, divided
1 tsp salt (if desired)
1/4 tsp pepper
3/4 cup pork rinds, crushed
|
Preparation:
In a large bowl combine cheese, sour cream (I only used about half
of the sour cream), chilies, 2 tablespoons butter, salt & pepper,
mix thoroughly. Gently fold in slightly defrosted cauliflower florets
until well coated. Spoon into greased 2-1/2 qt baking dish. Add
remaining butter to crushed pork rinds and mix until crumbly. Sprinkle
over vegetables and bake uncovered at 350 degrees F for about 30
minutes or until brown and heated throughout. Very good. Also good
reheated.
